Daging Masak Hitam

1) Cili kering + bawang merah =
goreng taruh minyak sikit aje, blend dulu

2) Jintan manis + jintan putih + kayu manis + buah
pelaga + bunga lawang + bunga cengkih = goreng tanpa
minyak, agak-agak garing sikit angkat la.

3) Halia + serai

4) bawang besar (masak ni pakai banyak bawang besar,
barulah kick..)kerisik, air asam jawa atau sedikit
cuka, kicap agak-agak lebih sikit, garam/gula secukup
rasa.

Masukkan kesemua bahan-bahan di atas 1 + 2 + 3 + 4.
Lepas tu blend sampai hancur.. daging dipotong
agak-agak tidak tebal dan tidak nipis.. masukkan
bahan-bahan yang telah diblend. Perapkan selama 3 atau
4 jam.. tapi kalau perap sehari semalam lagi best..


Bila dah bersedia untuk dimasak mulalah dengan
masukkan minyak, tumis bawang putih + bawang merah,
bila dah kekuningan daging yang telah diperap tu,
biarkan dalam api yang sederhana, nanti air daging
akan banyak keluar. Biarkan sampai ia nampak agak
pekat, sebati dengan daging, nanti air daging akan
buatkan masakan ni sedap. Bila dah nampak daging
lembut dan nampak agak pecah minyak.. barulah masukkan
bawang besar yang dipotong bulat-bulat, masukkan cili
hijau potong dua, tomato potong bulat-bulat..
biarkan api perlahan. Rasala dulu.. kalau dah rasa
okey, puashati barulah tutup api.. dah siap
